Dipping sauce differs from region to region in China. Just as dumplings are wrapped different in other regions as well. This is a typical dipping sauce from the Sichuan region, where my husband is from. It happens to encompass some of the commonly know regional flavors as well. A bit of garlic, cilantro, chili, bean paste, and vinegar. Most of which are not usually added to dipping sauce.
Dumpling Dipping Sauce
Ingredients:
3 Tbsp light soy sauce
3 Tbsp sesame oil
3 Tbsp Chinkiang vinegar
1/2 tsp chili oil
1/2 tsp chili paste
1/4 tsp chili bean paste
2 cloves of garlic, peeled and minced
1/2 tsp of minced ginger
2 Tbsp of cilantro
Pinch of sugar
Instruction:
1. Mix together all ingredient's in a bowl, and whisk together until they are throughly combined.
2. Dip in dumplings, or pour over the top of them.
